What Exactly is Shrimp Scampi?

Shrimp scampi, for the uninitiated, is a classic Italian dish that’s all about plump shrimp cooked in a buttery, garlicky sauce. Traditionally, it’s served over pasta (angel hair, spaghetti, or linguine work well) and often has a touch of white wine for depth. In this version, I keep it simple yet packed with flavor, so you can enjoy it any day of the week without fuss.

And yes, if you’re wondering whether you can skip the wine, the answer is “Absolutely!” A splash of chicken broth does the trick if you’re keeping it alcohol-free.

The Art of Deveining Shrimp (Yes, It’s Worth It!)

Let’s talk about shrimp for a moment, specifically deveining. If you’ve ever looked at a shrimp and wondered about that dark line running along its back, that’s the digestive tract (yep). Deveining removes any grit or sand, ensuring that every bite is smooth and delicious. While it’s a small step, it makes a big difference!

Not a fan of deveining? Grab a bag of pre-peeled, deveined shrimp from the freezer section. It saves time and effort, especially on busy weeknights.

Cooking Tips for the Perfect Easy Shrimp Scampi

Cooking shrimp can be a bit of a balancing act. They’re delicate little things that cook fast, and nobody wants rubbery, overcooked shrimp. Here’s the trick: watch for them to turn pink and curl slightly into a “C” shape. If they’re curling tightly into an “O,” they’re likely overcooked. A couple of minutes on each side is usually all it takes.

Also, a heads-up: shrimp shrink as they cook because of their high-water content, so plan accordingly. A pound of raw shrimp will yield a bit less once cooked, so don’t be surprised if they’re a bit smaller on your plate. You can find little background info on shrimp, here.

Choosing Your Veggies

For this recipe, I like to keep it simple with just a few fresh ingredients that complement the shrimp. Red onions and garlic are must-haves for that savory, aromatic base. If you’re feeling adventurous or need to use up some veggies in the fridge, here are some great additions:

  • Zucchini: Sautéed zucchini slices blend perfectly with the shrimp, adding a mild, fresh flavor.
  • Asparagus: Roasted or sautéed, asparagus is a classic pairing with scampi. It’s crisp and adds beautiful color.
  • Green Beans: Another easy option that brings a subtle sweetness to the dish. Fresh, tender green beans sautéed alongside the shrimp are fantastic.

If time’s tight, you can microwave the veggies for a couple of minutes to soften them before tossing them into the pan. Just make sure they’re cut to similar sizes for even cooking.

Let’s Talk Pasta

For the pasta, I typically use spaghetti because it holds up well with the scampi sauce. Angel hair is a classic choice too, and it cooks even faster if you’re in a rush. Once your pasta is ready, toss it with a drizzle of olive oil to prevent sticking. Trust me, there’s nothing worse than a clump of pasta that won’t separate!

Want a healthier option? Try this recipe with zucchini noodles or whole-grain pasta. They pair wonderfully with the scampi sauce and add a bit more fiber to the meal.

A Few Fun Additions

Here’s where the magic happens. This dish is delicious as is, but if you’re up for adding a little more excitement, try these optional additions:

  • Red Pepper Flakes: Just a pinch adds a gentle heat that takes the flavors up a notch.
  • A Splash of White Wine: If you’re into a bit of zest, a splash of white wine adds depth and richness to the sauce.
  • Fresh Herbs: While parsley is classic, fresh basil or even a sprinkle of thyme can add a unique twist.

These add-ons aren’t required, but they can elevate the dish if you’re in the mood for something special.

Total Time 35 minutes
Course Main Course
Cuisine American

Ingredients

  • 1 16 oz Box of Spaghetti
  • 2 Tbls Unsalted Butter
  • 1/2 large Red Onion, Diced
  • 3-4 cloves Garlic, minced
  • 1/2 tsp ground cumin, divided
  • Sea Salt and Black Pepper, to taste
  • 1 1/4 lbs Large Shrimp, peeled and deveined
  • 3 Tbls Fresh Parsley, chopped
  • 2 large Lemons cut into wedges, divided

Instructions

  • Heat a large pot of water over medium-high heat. When water is boiling, add salt and allow it to dissolve. Add spaghetti and cook according to package instructions.
  • While the spaghetti is cooking, add butter to a large skillet set over medium heat. Add red onion and ground cumin. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring occasionally, until the onion softens and begins to develop some color, approximately 6-7 minutes.
  • Add the shrimp and garlic to the skillet and cook, stirring frequently, until the shrimp changes color and starts to curl slightly, approximately 2-3 minutes. Do not overcook.
  • Remove skillet from heat and add the chopped parsley and a couple squeezes of fresh lemon juice. Season with additional salt and pepper, if desired, and stir to combine. Set aside.
  • When spaghetti is ready, remove from heat and pour into a colander. Drizzle with olive oil and toss to coat, this will help keep the pasta from sticking. Transfer pasta to a warmed serving platter. Top spaghetti with the cooked shrimp mixture and serve immediately with the remaining lemon wedges and some freshly grated Parmesan cheese, if desired. Enjoy!
