Peachy Peach Cobbler

Ingredients
- Pre-heat oven to 400 degrees
- 4 cups Fresh peaches peeled, pitted and sliced
- 3/4 cup water
- 1/2-1 cup sugar This will vary depending on the sweetness of the fruit.
- 1 Tbsp Cornstarch
- 2 Tbsp Water
- 1/2 tsp salt
- 1 tsp lemon juice
- 1/4 cup butter
- cinnamon to taste
- Topping:
- 1 cup Bisquick
- 1/4 cup Butter
- 3 Tbsp boiling water
Instructions
- Filling:
- Add 3/4 cup water into a medium to a medium to a large-sized pot.
- To that, add 1 Tbsp cornstarch dissolved in 2 Tbsp of water. Add mixture to your pot of water add lemon juice and your peeled, pitted, and sliced peaches bring to a boil for (1) one minute. Tip: Using a small jar add water, then add in the cornstarch, seal with a lid, and shake until cornstarch is dissolved.
- Pour peaches into a (2) two-quart baking dish, and add small tabs of butter on top of the peaches and then sprinkle with cinnamon.
- Topping:
- Heat (3) three Tbsp of water to boiling stir in 1/4 cup of butter and until melted.
- Add Bisquick to a mixing bowl. Slowly sprinkle water over Bisquick and using a fork work into the dry ingredients to make the dough. Then gently spread over top of peaches.
- Bake for 20 -30 minutes until peach filling is bubbly and topping is golden. Remove from heat cool slightly and serve warm. Great when topped with whipped cream or vanilla bean ice cream.
